Chunky Cashew Butter
Enjoy cashew butter just like you would peanut butter. Try it spread on toast or apple slices, mix it into your favorite smoothie, or stir some into your oatmeal. Skill Level: Beginner. Makes 20 servings.
- 1 lb raw cashews
- 2 Tbsp. honey (local if possible)
- 1/3 cup olive oil
- 1/2 tsp. salt
Add cashews and honey to food processor. Pulse and blend for 10-15 seconds.
Add olive oil and salt and pulse/puree until you reach your desired texture. You may need to scrape down the sides of the food processor to make sure everything is integrated. (The final product should still have some pieces of cashews versus being completely creamy.)
Store cashew butter in sealed container for up to 7-10 days.
Cashews and olive oil provide monounsaturated fats, vitamin E, and small amounts of protein. Gluten-free, dairy free.
