EDAMAME CRUNCH SALAD WITH ORANGE VINAIGRETTE

Ingredients

  • ¼ cup Olive oil
  • 2 T. Champagne vinegar
  • 1 T. Orange juice
  • 1 tsp. Orange zest
  • ½ T. Honey
  • pinch Salt
  • 2 cups Edamame, defrosted and out of the shell
  • 2 cups Mixed greens, arugula and spinach as examples
  • ½ each English cucumber, sliced on the bias
  • 1 each Red bell pepper, diced
  • ¼ cup Dried cranberries
  • ¼ cup Pecans, toasted and halved

Instructions

  • In a small mixing bowl, combine liquid ingredients and salt and whisk well.
  • Add remaining ingredients to a large mixing bowl and toss gently with the dressing until everything is coated.
  • Enjoy!

Serving Size: approximately 1 cup
