Kale Caesar Salad

 

Massaging the kale with Caesar dressing and allowing it to rest makes the fibrous leaves softer and more flavorful. Additional vegetables give the salad a nutrient kick. Look for a Caesar dressing without added sugar, or make your own.

Ingredients

  • 2 bunches kale, stems removed, rinsed
  • 1 English cucumber, sliced and halved
  • 1 cup cherry tomatoes, sliced
  • 2 large carrots, peeled and sliced
  • 1 cup walnuts, toasted
  • ¼ cup parmesan cheese, shredded
  • ½ cup Caesar dressing

Instructions

  • Rinse and chop greens and place in large mixing bowl.
  • Massage kale with dressing and let rest for 15-20 minutes.
  • Add remaining ingredients and toss to combine. Enjoy!
