NUT & DRIED FRUIT TURTLES

Ingredients

  • 1 cup Nut of choice, toasted pistachios work well
  • 1 cup Dried fruit of choice, halved or chopped (apricots work well)
  • 1 cup Bittersweet chocolate, melted, 55-60% cacao
  • ½ tsp. Himalayan salt

Instructions

  • Toast nuts in a dry heated pan or in the oven (baking sheet) for 5-10 minutes at 275 degrees. Set aside.
  • Melt chocolate using double boil method. This keeps the chocolate from burning.
  • Place a large piece of parchment paper on a large baking sheet.
  • Evenly distribute 1 T. of nuts onto the parchment, leaving 1-2 inches between each pile.
  • Place small amount of dried fruit on top of the nuts.
  • Using a spoon, pour 1 T. of melted chocolate onto each cluster of nuts and dried fruit.
  • Top the melted chocolate with the remaining dried fruit and small amount of salt on each turtle.
  • Place baking sheet into the fridge for 15-20 minutes to set. Enjoy!
  • Keep turtles in an airtight container at room temperature or in the fridge.
