SHEET PAN CHICKEN, VEGETABLE & GRAIN BOWL

Ingredients

  • 2 each Chicken breast filets, thin cut, 5-6 oz. each (chicken thighs also work well)
  • 1 each Red bell pepper, julienned
  • 1 each Red onion, medium, julienned
  • 1 small Sweet potato, diced
  • ¾ cup Job’s tears or whole grain of choice, cooked
  • 1 ½ T. Olive oil
  • 2 tsp. Everything Bagel Seasoning or seasoning of choice

Instructions

  • Preheat oven to 350 degrees.
  • Place chicken breasts or chicken thighs on a large baking sheet. Keep these to one side of the pan.
  • Add remaining ingredients to the pan. Feel free to mix the vegetables and grain together or leave separated on the pan.
  • Drizzle olive oil on top of all ingredients.
  • Sprinkle seasoning on top of chicken, vegetables and grain.
  • Bake for 20-25 minutes or until the chicken is done.
  • Once cooled, evenly distribute the ingredients into two Tupperware containers or onto two plates. Use this meal for lunches or dinners for the week
