FREEKEH PILAF

- 4 cups Freekeh, cooked (whole grain)
- ½ cup Kale, shredded
- ¼ cup Celery, diced
- 2 T. Olive oil
- 1 T. Apple cider vinegar, unfiltered
- 1 T. Lemon juice, fresh
- 4 leaves Mint, fresh, finely chopped
- ½ tsp. Kosher salt
Cook freekeh in vegetable broth. Rinse and cool whole grain and set aside.
Thinly slice the celery and shred kale and place into a large mixing bowl.
Once grain is cooled, add freek to the kale and celery and mix with the remaining ingredients. Season to taste.
Enjoy this whole grain with your favorite protein.
This keeps fresh in an airtight container for up to 5 days.
