FREEKEH PILAF

Ingredients

  • 4 cups Freekeh, cooked (whole grain)
  • ½ cup Kale, shredded
  • ¼ cup Celery, diced
  • 2 T. Olive oil
  • 1 T. Apple cider vinegar, unfiltered
  • 1 T. Lemon juice, fresh
  • 4 leaves Mint, fresh, finely chopped
  • ½ tsp. Kosher salt

Instructions

  • Cook freekeh in vegetable broth. Rinse and cool whole grain and set aside.
  • Thinly slice the celery and shred kale and place into a large mixing bowl.
  • Once grain is cooled, add freek to the kale and celery and mix with the remaining ingredients. Season to taste.
  • Enjoy this whole grain with your favorite protein.
  • This keeps fresh in an airtight container for up to 5 days.
