VANILLA CHIA PUDDING

- 1 can Coconut milk, full fat
- 3 T. Chia seeds
- 1 ½ T. Honey, local
- ½ T. Pure vanilla extract
Add all ingredients to a medium sized mixing bowl. Stir all ingredients until well combined.
Cover bowl with airtight seal, saran wrap, or pour into single serve portions (e.g., ramekins).
Allow the mixture to chill for at least 2 hours before serving. Feel free to let this chill and rest overnight.
Enjoy in the morning, as a snack and add toppings such as mixed berries or cooked apples.

Nutrition Information: Chia seeds are rich in omega-3 fatty acids, essential amino acids and dietary fiber. This “pudding” has a similar texture to tapioca. Gluten-free, nut free, dairy free.
