BISON BURGERS WITH SWEET POTATOES & SAUTEED VEGETABLE OF CHOICE

This meal is great for the entire family. We suggest using ground turkey or ground beef if you don't have ground bison available. Enjoy!

Ingredients

  • 2 each Sweet potatoes, medium, cut into fries or wedges
  • 2 1/2 T. Olive oil
  • 1 tsp. Kosher salt
  • ¼ tsp. Black pepper, ground
  • 1 ½ lbs. Bison, ground (substitute for ground turkey, beef or chicken)
  • 4 slices Gouda cheese
  • 4 each Slider or burger buns, toasted if desired
  • 1 each Red onion, sliced
  • 1 cup Bibb lettuce
  • 1 each Tomato sliced
  • 2 T. Whole grain mustard, separated
  • choice Sauteed seasonal vegetable, seasonal vegetable is recommended

Instructions

  • Preheat oven to 400 degrees.
  • Place cut sweet potato wedges in a large bowl and toss with 2 T. of olive oil, salt and pepper.
  • Spread sweet potatoes onto a baking sheet and begin to roast in the oven, roughly 20 minutes. Check on potatoes after 10 minutes and turn if needed.
  • While sweet potatoes are roasting, preheat a cast iron pan to medium high heat.
  • Form 4, 5-6 oz. patties and season with salt and pepper on both sides.
  • Sear patties in the heated cast iron pan for at least 4 minutes per side. Place 1 slice of cheese on top of each burger.
  • Finish cooking patties in the oven for another 5-8 minutes or until desired doneness. The cheese should melt in the oven.
  • Remove sweet potatoes and burgers from the oven and allow everything to cool for 3-5 minutes.
  • Assemble burgers with a toasted bun, lettuce, tomato and onion.
  • Enjoy burger, sweet potatoes and any other vegetable of choice.

Serving Size: composed burger + ½ cup sweet potato fries and choice vegetable
Nutrition Information: Bison is high in protein, iron and low in saturated fat. Using different ground meats can be honored such as turkey, chicken or beef. Nut free.
