Prepare a baking sheet by lining with parchment paper and lightly coating with olive oil.

In a separate bowl, mix nuts together.
Dredge chicken thighs in eggs, evenly coating them.
Transfer chicken to nuts and evenly coat.
Arrange nut crusted chicken on baking sheet. Season chicken with a pinch of salt.
