First, pour the 2/3 cup apple cider or juice and 2/3 cup cane sugar into a medium pot.
Bring mixture to medium heat and whisk until the cane sugar dissolves, about 5 to 6 minutes. Avoid bringing mixture to a simmer or boil. This makes a simple syrup.
Pour simple syrup into an airtight container and set aside to use for the tonic.
Add the remaining cider or juice into a blender with ice, vanilla extract and fresh ginger. Puree until smooth.
Pour even amounts of the blended apple cider and vanilla mixture into a glass.
Add 1-2 tsp. of simple syrup to each glass. Top off each drink with sparkling water.
Garnish with cinnamon stick, cranberries and apple slice. Enjoy!
